Sorry, still confused about solubility vs. disociation?

Soluble means that something dissolves in a given solvent but dissociating means that it breaks up into particles such as ions. For example, both sucrose(C12H22O11) and salt(NaCl) are soluble in water at room temperature meaning that they both dissolve in water but only salt(NaCl) dissociates(breaks up) into ions, sucrose does not dissociate.
